Olio Nuovo


Olio Nuovo is only available for a few weeks each fall, just after we harvest. As it is bottled before the sediment settles out, it should be consumed by early winter.

Olio Nuovo, (Italian for new oil) is a term used to describe all newly milled olive oils. It is very fresh, sharp, lively, and bright. Ours is fruity and aromatic with notes of fresh grass, artichoke, ripe fruit, and a smooth finish. It is milled from our early ripening varietals.
